Summer is almost at the finishing line. Which means, watermelons are all set to say good bye. Before enjoying the last of those juicy melons, here is a must try recipe. A wonderful halwa made out of watermelon rind. Yes, you read that right. This delicious dessert is made out of the always discarded rind. You won’t believe until you try and taste it.
Watermelon Rind – 3 large wedges
Ghee – 2-3 tbsp
Semolina/Suji – 1 tbsp
Besan/gram flour – 1 tbsp
Sugar – ½ cups
Cardamom powder – ½tsp
Nutmeg Powder – a pinch
Milk – 1 cup
Almonds & Pista – Handful
Peel the outer thick green layer of the watermelon. Again peel another layer just beneath the green layer. Roughly chop the white rind. Add it to a grinder and make into a paste without using any water.
Heat a pan and melt ghee. Add suji, besan and cook on low flame till they brown. Add the melon rind puree and cook it till it thickens up. This should take around 15-20 mins. Add sugar and cook again for around 10 mins. To this, add cardamom powder, nutmeg powder and milk. Cook for another 5 minutes and remove from heat. Garnish with almonds & pista and serve hot.
