Ingredients:

Tofu – 140 gms

Curry powder – 5 grams

Kale – 50 grams

Garlic – 5 grams

Whole turmeric – 10 grams

Salt/White Pepper – For taste

Coconut Milk – 100 ml

Fresh Red Chilli – 2

Oil – 1 tbsp

Method:

Make paste of ginger, garlic and raw turmeric. Keep it aside. Heat oil in a pan and add curry leaves and let it crackle. Add ginger, garlic and turmeric paste to the pan. Saute it on medium flame and make sure it doesn’t stick to bottom. Add fresh red chilli and curry powder to the pan and sauté for one more minute.

Add in a ladle of stock water and add seasoning. Now add kale and coconut milk. Let it simmer for a while. Add in tofu to the pan and let it simmer. Ensure the tofu doesn’t break. Remove from pan and garnish with shredded ginger. Serve hot.

This dish looks absolutely delicious and is very healthy at the same time.
