Crispy Bhendi  This recipe is my version of crunchy, crispy Lady’s finger fondly called as “Bhendi” in Hindi. This is a very quick recipe that can be made as a side dish to your dal and rice, I honestly prefer munching on it like a snack without accompaniments. Go ahead!! Give it a try..

Crispy Bhendi

½ kg lady’s finger fine chopped
4-6 tablespoons of gram flour
1 tablespoon chilli powder
1 teaspoon turmeric
Salt to taste
Vegetable Oil for shallow frying

First take a large bowl and add in the gram flour, chilli powder, turmeric and salt to taste. Mix all of this together. Make sure not to add any water to it this is totally a dry powder. Now add into this the finely chopped lady’s fingers and mix it well so that the powder coats properly. In a wok add in about a quarter bowl measure of oil and make it hot. Now add in the lady’s finger mixture and fry and medium flame, make sure to lower the heat if it pan is getting too hot. Fry this until it’s crispy and the colour has changed to dark brown. Take off the heat and remove excess oil on a tissue paper. Transfer to a serving bowl. Enjoy!!
