Mango season is in full swing. Making the best of the king of fruits should definitely be on everybody’s list. With minimum ingredients you can fix a quick salad that is super tasty as well.

Ingredients:

Mango – 1

Rocket leaves – 2 cup

Nut mixture (hazelnuts, almonds, cashews and pista) – 1/4 cup

Apricots (dried) – 8

Olive oil – 2 spoons

Salt to taste

Balsamic vinegar – 1 pinch

Method:

Peel and dice the mango into medium sized cubes. Wash rocket leaves thoroughly and dry well in cotton cloth. Roast the nuts mixture on a low flame. They turn golden brown and aromatic. Chop dried apricots.

Now, whisk vinegar, oil and salt well until thick. Toss all the ingredients in a large bowl. Pour the dressing over it. Give a good light mix. Don’t be hard on the ingredients as it may turn them mushy and soggy. Serve fresh almost immediately.
