Ever heart of Egg Paddu or Paniyaram ? Well, until we tried and loved it instantly, we were strangers too. This probably is the easiest way to include egg into breakfast unknowingly. Best recipe for moms with fussy eating kids. Also there is no rocket science in it and hence very easy and quick to make.
Paddu or paniyaram is a South Indian breakfast dish. Adding eggs to them increases their protein value. And tastes the best, which goes without saying. Any leftover idli or dosa batter will turn tastier with this new avatar.
Eggs – 2
Idly or Dosa batter – 1 cup
Salt- to taste
oil for greasing
Black pepper powder – 1 tsp
Cumin powder – 1 tsp
Break open the eggs in a bowl and beat well with a whisk. Add pepper powder, cumin powder, salt and beat well again. Add the batter and spoon mix well till it gels well with beaten eggs.
Heat a paddu tava and grease with few drops of oil. Pour batter till the rim and close the lid. Let it cook over low flame for 2-3 mins.
Remove the lid and with a spoon or skewer, gently turn over each paddu or paniyaram. Let it cook for 1 minute. Remove onto a plate and continue with the rest of the batter.
Serve hot with any chutney or sambar of your choice
