Neera is obtained by extracting fluids from the Spathe or flower bunch inside a leafy bract. Ice blocks are tied around the Spathe from which the liquid oozes out. The temperature is maintained in 4 degree Celsius. All this is early in the morning and the fluid which is Neera is immediately sent to manufacture sugar.
