Pasta has become staple to many people nowadays. This Italian dish has evolved to co exist. Preparing this the Indian way is much easier that we know. Simple ingredients in a regular Indian kitchen can give a completely different twist to pasta.
Pasta – 1 cup
Salt – 1 tsp
Oil – 1 tsp
Butter – 1 tsp
Garlic (finely chopped) – 3 cloves
Ginger (finely chopped) – 1 inch
Onion (finely chopped) – 1
Tomato puree – 1 cup
Turmeric powder – 1/4 tsp
Chili powder – 1/2 tsp
Garam Masala – 1/2 tsp
Tomato sauce – 2tbsp
Corn – 2 tbsp
Capsicum (finely chopped) – 1/2
Green peas – 2 tbsp
Broccoli – 5 florets
Basil, oregano, thyme, rosemary – 1/2 tsp together.
In a wok add 1 tsp butter. Add ginger and garlic and saute well. Add onions and saute till golden brown. Add tomato puree and give a good stir. Now add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt. Saute till the spices gets cooked well.
Further, add 2 tbsp corn, ¼ capsicum, ¼ carrot, 2 tbsp peas and 7 florets broccoli. Saute for a minute and add 3 tbsp water and mix well. Cover and simmer for 5 minutes.
Next add 2 tbsp tomato sauce and all the herbs. Give a good mix. Add cooked pasta and mix gently. Once pasta is coated well, serve hot. You can top it with grated cheese if you wish.
