Ever thought of grilled food for a quick snack? Grilling anything would probably take more time to think it as quick. But here is a super healthy recipe that can be prepared in 20 minutes max. Grilled Asparagus Shiitake tacos are tasty even to the eyes.
Cooking Oil -3 tbsp
Crushed garlic cloves – 4
Kosher Salt – 1/2 tsp
Shiitake Mushrooms (without stems) – 8 to 10
Spring Onions – 1 bunch
Corn Tortilla – 8
Coriander leaves – a handful
Hot Sauce to serve
Heat grill on medium. Combine oil, garlic and salt in baking tray. Add asparagus, shiitakes and spring onions. Let spring onions be roughly chopped. Toss well so that everything is coated evenly.
Grill asparagus until tender and lightly charred. Turn occasionally up to 5-6 minutes. Grill shiitakes and spring onions until lightly charred. Keep turning them now and then until 4 to 5 minutes. Transfer vegetables to cutting board.
Cut asparagus and spring onions into equal lengths to fit inside tacos. Slice shiitakes likewise. Serve with corn tortillas, guacamole, lime wedges. Garnish with coriander leaves and hot sauce.
