Twisted Potato Casserole


½ bowl of red bell peppers, chopped

½ bowl of green bell peppers, chopped

½ bowl of yellow bell peppers, chopped

1 Onion fine chopped

2 Green Chillies

1 to 2 boiled potatoes

3 to 4 chicken sausages cut into small circular pieces

3 to 4 button mushrooms, chopped

Vegetable oil

Salt & pepper to taste

1 can of baked beans

¼ cup of water

Parsley, fine chopped for garnish

1 bowl of shredded processed cheese

Twisted Potato Casserole


In a skillet drizzle some oil, add in the onion and chilli and fry till the onions are nice and glossy and slightly golden brown. Add in all the bell peppers and stir it a little, to this add the mushrooms and chicken sausages and fry till it cooks well. Chop up 1 potato that was boiled and kept and add into the mixture. Ensure that it does not smash up and fry till lightly crispy and brown. Add salt and pepper to taste and sauté the mixture of vegetables, mushrooms and sausages. Finally add in the baked beans and give it a mix.

Preheat the oven to 350 degrees and add the prepared mixture into it. Add a layer of mashed potato over the mixture followed by a layer of cheese.

Bake for 15 minutes or until the cheese layer turns slightly brown and crispy. Add parsley as garnish and Serve Hot.
