Focaccia is an Italian bread. The most colorful pictures of this dish is all around the internet now. The best part of this bread is that you can customize it in 1 million varieties. All you should know is the basic recipe.
Any bread asks for long kneading process. But here is a magic focaccia recipe that doesn’t need kneading at all. And the taste? We bet you won’t even look into other recipes after trying this.
All purpose Flour ( maida) – 3.5 cups
Instant yeast – 1 tbsp
Olive oil – 6 tbsp
Warm water – 1.5 cups
Salt – 1.5 tsp
For Seasoning – Rosemary, olives, cherry tomatoes (All Optional)
Grease a 9 x 13 inch pan with oil. Pour 2 tbsp olive oil into the pan and keep aside. In a mixing bowl add flour, salt, instant yeast, seasoning (if using) and mix well. In another bowl, take warm water and add 3 tbsp olive oil.
Make a pit in the center of the flour mixture and pour the water-oil mix into it. Make a sticky dough either by using your hands or by using an electric mixer to which dough hooks are attached.
Drop the sticky dough into the greased pan and gently pat. Cover the pan with a cling film and let it rise for 1 hour or till it is puffy. Preheat the oven at 190 C or 375 F.
Remove the cling film from the pan and make dents all over the surface by poking with your index finger. Do not make a hole right through to the bottom of the pan. Drizzle the remaining 1 tbsp olive oil and sprinkle with your choice of seasonings if you are using them. You can also use onion slices and coriander as simplest toppings.
Bake the bread till its golden brown for 25 to 30 mins. Remove from oven and rest for 5 mins. Gently transfer to a wire rack. Serve it warm. Focaccia goes well with soup, pasta or just any spread.
