Pumpkin soup is more like a comfort dish. But if added a bit of magic, it can turn into amazing food anytime of the day. Generally, it seems like a long process for a tasty pumpkin soup to be made. But no, we have a magic recipe here. You can prepare pumpkin soup in literally less than 15 mins including preparation. Follow the recipe.
Sweet pumpkin (peeled, deseeded and diced) – 1 cup
Potato (peeled and diced) – 1/2 cup
Salt – to taste
Butter – 1 tbsp
Oregano -1/4 tsp
Chilli flakes – 1/4 tsp
Pepper powder – 1/4 tsp
Heat butter in a pan. Add pumpkin and potato into it a fry slightly for about 2 mins. Cool it and blend into fine paste. Potato helps in giving the creamy texture to the soup. Hence adding corn starch can be skipped as in general recipes. Transfer this back to the pan. Add seasonings while boiling the soup. Add salt, pepper and chilli flakes first. You can omit chilli flakes if needed. Add oregano just before switching off the flame. Use chopped walnuts, coriander leaves and fresh cream for garnishing. Can be skipped as well.
