Dal Makhani is a punjabi staple. Nothing can beat the rich taste and flavor of this simple but luxurious dish. There are a variety of recipes to cook dal makhani. But there definitely will not be any that is as simple as this one. This is a recipe that the chefs use in restaurants. With very few ingredients, this dal malhani recipe is sure to be a super hit one.
Kaali Dal – 3/4 cup
Rajma – 1/4 cup
Tomato puree – 1 cup
Butter – 1 cup
Chilly powder – 1 tbsp
Salt to taste
Fresh Cream – 1/2 cup
Soak rajma and kaali dal overnight. Pressure cook rajma and kaali dal with salt and water for 6 whistles. Take a wok. Add 3 spoons of ghee. Once ghee melts, add ginger garlic paste. Saute well on low flame. Add red chilli powder and mix well. Add tomato puree and a little water from cooked dal. Give a good mix. Add salt and mix.
Now add cooked dal along with water. Put the flame on high and mash the dal using butter churner or take a ladle and mash the dal to the side of the vessel. After doing this for 5 mins, add butter and mix well. Do all of this on high flame. Continue the mashing. Now cover it and let cook on low heat for 15 minutes.
Add half a cup of cream and mix well. Now let cook for few more minutes. Finally top some cream for traditional garnish. Enjoy Dal Makhani with roti, chapathi phulkas or rice.
