English Breakfast is loved by a bigger part of world. Though not loaded with spices like their Asian counterparts, these are healthy. The numerous options in English breakfast are wonderful. Here is a delicious recipe which is vegan as well. It is eggless banana scones.
Banana (ripe) – 1
All Purpose Flour – 11/4 cup
Sugar – 5 tbsp
Baking powder – 1 tsp
Cinnamon Powder – 1/2 tsp
Salt – 1/4 tsp
Milk – 2 tbsp
Yogurt / Curd – 1/4 cup
Vegetable Oil – 3 tbsp
Take a bowl and add all purpose flour, baking powder, salt, cinnamon powder and sugar into it. Drizzle the oil and work into the flour with your finger tips. Continue doing it until it resembles bread crumbs. Set aside.
Take another bowl. Put in banana, milk, yogurt and mash all of them well. Now bring both the mixtures together. Mix well until it looks like a loose dough.
Now take a plate and place butter paper on it. Transfer the dough on the sheet and pat with fingers to 1 inch thickness. Close it by placing another plate on the top. Keep it in freezer for 30 minutes. After this, take off the plate and cut into wedges by slightly pulling apart.
Transfer all of it to a baking tray. Bake it in a pre heated oven for 35 minutes. It should be firm to touch once done. Take out the tray from the oven and let it cool completely. Cut with a sharp knife along the wedges already made and they will easily come off. Enjoy for breakfast.
Note: You can add dry fruits or seeds mix as toppings.
