Pesto is a savior sauce. If you have a bottle of pesto stored in refrigerator, then you are good to go anytime. Pesto has innumerous variants. But the basic classic pesto is a must know how for all. Here is the simplest pesto recipe that is tried and tested.
Pine Nuts – 50 grams
Basil – Handful
Parmesan – 50 grams
Olive Oil – 2 tbsp
Garlic cloves – 3
Lemon juice – 1 tsp
Salt to Taste
Take a frying pan and dry roast pine nuts on low flame. Once cooled, shift it to mixer or food processor. Add in basil, Parmesan, garlic cloves, lemon juice and a pinch of salt. Grind into fine paste.
Now add olive oil and give a good mix. You can additionally add pepper powder if desired.
Store this pesto in air tight glass jar in refrigerator. You can just cook pasta and add this pesto with toppings for a quick fix meal. This also doubles as healthy spread for sandwiches.
