Eggs are always filling and hence best choice for breakfast, lunch and dinner. This middle eastern- North African dish is a favorite among many. With fewer ingredients, Shakshuka is also a hit in buffets.

Ingredients:

Eggs – 4
Onion (chopped) – 1
Tomato (chopped) -1
Capsicum (Chopped) – 1/2
Bell pepper (Yellow + Red chopped) – 1/2 cup
Tomato Puree – 1 cup
Salt – To taste
Chilli powder – 1 tsp
Oil – 3 tbsp
Chaat Masala – 1/2 tsp
Oregano – 1 tsp
Chilli flakes – 1.5 tsp

Method:

Firstly take a skillet or frying pan and add oil. Add onions and fry until golden. Add capsicum and bell peppers and fry for a minute. Now add tomatoes and keep mixing till it turns mushy. Now add chilli powder and chaat masala and mix well. After all this is well combined, turn the flame to low and add oregano, salt and chilli flakes. Mix it well.

Now make small pits in the mixture. Break eggs into the pits. Top the eggs with salt and pepper powder. Close the pan for 3 minutes and cook in low flame. After 3 minutes turn off the flame. Eggs will continue to cook in the heat of the mixture. If you prefer eggs runny, then turn off the flame earlier. Enjoy Shakshuka with bread or chapathi.

Note: There is another variant of this dish where eggs are mixed thoroughly instead of dropping separate in pits. It would look more like another version of burji but tastes good nonetheless. Also, the options to add veggies is open ended. Hence you can add cherry tomatoes, cilantro, cheese to garnish. Olives, marinated shrimps, carrots, boiled peas are also good add-ons.
